Es una Cuvée Saison envejecida en barrica durante 1 año, misma base que Jaco ("turbid mash"), de cocción larga con lúpulo viejo y trigo crudo de Cal Pauet. Compleja, funky y afrutada con notas de madera que se irán integrando. Receta en evolución.

Our first barrel-aged beer of the year, in honor of the great Thelonious Monk. It is a Cuvée Saison aged in barrel for 1 year, same base as Jaco (turbid mash), long boiled with aged hops and raw wheat from Cal Pauet. Complex, funky and fruity with woody notes that will evolve with time. Recipe in evolution.
